The boys

Over Christmas Elijah really started watching Wyatt and what he was doing.  Mid January we were celebrating my dad's birthday and Wyatt was very entertaining for Elijah.  Every once in a while Wyatt would sit down and talk to him.  It was so cute!
 Wyatt wanted to hold Elijah so bad.

 Wyatt started laughing at something we were doing and it startled Elijah.
 Poor Wyatt was bummed that Elijah didn't want to sit with him anymore.
 We took a little intermission.  Wyatt worked on a few things
 and Elijah practiced his shapes.
 The second time we got much better results!

5 Months

Last Tuesday Elijah turned 5 months old.  He has been so much fun!  He did a much better job cooperating for pictures this time.







He:
-is still chewing/sucking on his fingers constantly
-is starting to get his pacifier into his mouth all by himself
-rolls over both ways
-loves watching Emma and tries to grab handfuls of her fur (thankfully she is very patient)
-loves playing "peek-a-boo"
-becomes very serious when we go somewhere else (he watches everything/everyone intently)
-is almost sitting up without any help
-prefers to be sitting up (he doesn't want to miss anything)
-is still waking up numerous times during the night to eat
-loves to play with my hair
-has a little white spot on his bottom gum where a little tooth is trying to poke through
-is a happy little guy unless he's tried or hungry
-has been sleeping in his crib instead of the cradle
-wakes up in the mornings and from naps and plays in his crib until I go get him

Taste of Our Home Tuesday: Chicken Taco Salad

Justin and I enjoy taco salad, so when I found this Chicken taco salad on Pinterest I wanted to try it.  After I followed all the links I found the original name of the recipe was Southwestern Chopped Chicken Salad.  Regardless of the name, we both really enjoyed this salad.  We were curious how it would taste the following day, wondering if the lettuce would have wilted.  Surprisingly it was still delicious!  The only changes we made were adding a little Dorothy Lynch and cheese to the top.  I already had my chicken cooked from a previous recipe making this one super fast to throw together.  This is a very tasty recipe! Enjoy!!!      
Ingredients
 For the salad:
2 cups shredded chicken
1 green bell pepper, diced
1 can black beans, rinsed
1 can sweet yellow corn (or 1 cup frozen corn, thawed)
2 roma tomatoes, diced
4 green onions, sliced
1 head ice berg lettuce, washed and chopped
1/4 cup cilantro, chopped
2 ripe avocados, diced
1 cup crushed tortilla chips
 
For the dressing: 
1/2 cup mayonnaise
2/3 cup Greek yogurt
1 tbsp ranch seasoning
1 tbsp taco seasoning
 
Directions
In a large bowl, combine all salad ingredients together, excluding the tortilla chips.  
In a small bowl stir all dressing ingredients together.  
Pour dressing over salad, starting with about half of the dressing.   
Toss to combine, then gradually add more dressing until it is dressed to your liking.   
Top with tortilla chips

He did it!!!

Last Wednesday Elijah rolled over from his tummy to his back for the first time while Grandma was watching him.  He did it again for Justin and I that night.  He hasn't done it much since preferring to be upright in his jumper or Bumbo.  Today I had him on his blanket and the next thing I knew he had rolled from his back onto his tummy.  He was so proud of himself! 

Taste of Our Home Tuesday: Caramelized Ham and Swiss Buns

Justin had seen these sandwiches in my Taste of Home and marked the page.  We finally got around to trying them tonight.  They were very delicious!  The horseradish makes for a tangy sandwich.  The recipe does say that they need to sit covered for several hours or overnight.  We did not let ours sit that long because I forgot to do it the night before.  In the hour that they sat the mixture soaked in enough for us.  I plan on adding this recipe to the "keep file".  Enjoy!!
Caramelized Ham & Swiss Buns Recipe
Ingredients:
1 package (12 ounces) Hawaiian sweet rolls, split
1/2 cup horseradish sauce
12 slices deli ham
6 slices Swiss cheese, halved
1/2 cup butter, cubed
2 tablespoons finely chopped onion
2 tablespoons brown sugar
1 tablespoon spicy brown mustard
2 teaspoons poppy seeds
1-1/2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
 
Directions:
Spread roll bottoms with horseradish sauce. Layer with ham and cheese; replace tops. Arrange in a single layer in a greased 9-in.-square baking pan.
 
In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Stir in remaining ingredients. Pour over rolls. Refrigerate, covered, several hours or overnight.
 
Preheat oven to 350°. Bake, covered, 25 minutes. Bake, uncovered, 5-10 minutes longer or until golden brown. Yield: 1 dozen.

Bubbles and Great Grandchildren

 
Elijah has learned to spit/blow bubbles.  He is constantly showering us with his love. :)

We got a picture of Grandpa and his three Great Grandchildren on New Year's Eve.  Getting all four of them photographed was quite the challenge, but very entertaining!

Elijah's New Trick

On New Year's Eve Elijah figured out how to blow bubbles and spit.  He has been doing it constantly ever since.  He thinks he's pretty big stuff!
